- Cast iron pan or grill-safe pan – I use small cast iron pans to make this recipe. They’re cute and double as a serving dish.
- Feta – Use a 6-8 ounce block of solid, full-fat feta. Round or square – that’s up to you!
- Extra virgin olive oil – Now’s the time to use the good stuff. Olive oil and feta go hand-in-hand.
- Fresh herbs – Fresh thyme, parsley, basil, oregano, rosemary (but go easy on the rosemary), all work well in this recipe.
- Red pepper flakes – You need a bit of oomph added to the feta, and a few red pepper flakes does the trick! Add more if you like it spicy.
- Black pepper – A few grinds of fresh black pepper are perfect.
- Lemon – Lemon cuts the saltiness of the feta so pass some wedges around.

- Chop all your herbs and have them ready to go.
- Place the feta into the center of the cast-iron pan and drizzle the olive oil over the top. Pop the pan onto the grill and leave it for about 15 minutes.
