- Set your Instant Pot to saute and when it is hot add the oil, sausage links (remove the casings), onion, and garlic.
- Break up the sausage with a spatula as it browns, chopping it into small pieces.
- Deglaze the Instant Pot insert with some of the beef broth and scrape up all the tasty bits stuck to the bottom.
- Add the rest of the broth, canned tomatoes, and Italian seasoning. Lock the lid into place and set the Instant Pot to high pressure for 15 minutes.
- Quick release when the time is up then add the zucchini and tortellini. Set the Instant Pot to high pressure for another 2 minutes, then quick release.
- Open the lid away from you and stir in the cream. Adjust the seasoning, adding salt and pepper if needed, then serve!

Since the Instant Pot was elsewhere, and because we wanted this soup NOW, alterations in time were made to accommodate stove-top method. Through step 4 took about 30 minutes, added the zucchini for 10, then the tortellini for 10. Tested tortollini to make sure it was cooked through. Added the cream. Seasoning was perfect. Parmesan and a sprinkle of black pepper added at the table gives this is an extra boost. Diners can add more salt, if desired. Red pepper flakes were sprinkled judiciously when Italian seasonings were added. Otherwise, I stuck devotedly to the recipe. Husband could not stop eating it and said we needed to put it “in the rotation”. Willingly, gladly. And we thank you for a really satisfying recipe.
