I love that you can mix and match ingredients to make these as fully loaded as you like. This Pizza Muffin recipe includes pepperoni, peppers, and a bit of onion, but you could add olives, mushrooms, bacon, and sausage – the sky is the limit!

Plus, they’re so easy to make. you mix the cheese, sauce, and pepperoni in one bowl, make the batter in another bowl, combine the two, and bake! This recipe is so easy, kids can make it.

  • Pepperoni – Any kind; chop it up.
  • Mozzarella cheese – Shredded.
  • Bell pepper – Any color; finely diced.
  • Onion – Yellow or white onion; finely chopped.
  • Pizza sauce
  • Garlic powder
  • Crushed red pepper flakes
  • Eggs
  • Vegetable oil
  • All-purpose flour
  • Baking powder

How To Make The Best Pizza Muffins

  1. Preheat your oven to 375-F and spray a 12-hole muffin tin with cooking spray.
  2. Mix the chopped pepperoni, mozzarella cheese, finely diced bell pepper, finely chopped onion, pizza sauce, garlic powder, and crushed red pepper flakes in a bowl.
  3. Beat the eggs in a stand mixer or with a hand mixer in a large bowl until well mixed.
  4. Beat in the oil, flour, and baking powder. Mix until well combined and mostly smooth – some small lumps are OK.
  5. Combine the batter with the pepperoni and cheese mixture and mix well.
  6. Divide the batter between the 12 muffin cups and bake for about 20 minutes or until the tops are lightly browned, and the muffins are cooked through.
  7. Cool in the muffin tin and serve warm or chilled.

Chef Jenn’s Tips

  • Keep the toppings limited to 3 cups, so there’s a good batter-to-mix-ins ratio.
  • How can you tell muffins are cooked? Test one – pierce it with a knife. If there’s goo on the knife, it’s not cooked.
  • Switch up the cheese – you can use Monterey Jack, Pepper Jack, gouda, or whatever you like.

These muffins are fabulous on their own, but I love a muffin with a bowl of soup, a serving of broccoli salad, or a French dip sandwich.

Storage

These muffins are loaded with protein, so they need to be kept in the fridge. Store them in an airtight container in the fridge for 1-2 days, or freeze them! Put them in a freezer-safe plastic bag or container and freeze them for up to a month. Just thaw and enjoy!
