  • Preheat your oven to 375-F and spray a 12 hole muffin tin with cooking spray.
  • Mix the chopped pepperoni, mozzarella cheese, finely diced bell pepper, finely chopped onion, pizza sauce, garlic powder and crushed red pepper flakes in a bowl.
  • Beat the eggs in a stand mixer or with a hand mixer in a large bowl until well mixed.
  • Beat in the oil, flour, and baking powder. Mix until well combined and mostly smooth - some small lumps are OK.
  • Combine the batter with the pepperoni and cheese mixture and mix well.
  • Divide the batter between the 12 muffin cups and bake for about 20 minutes or until the tops are lightly browned and the muffins are cooked through.
  • Cool in the muffin tin and serve warm or chilled.
