Ingredients

  • Breakfast sausage links – Cook and cool slightly before cutting so they hold their shape when baked.
  • All-purpose flour – Measure carefully; too much will make the bites dense.
  • Sugar – White granulated sugar; small lumps are fine and will dissolve during mixing.
  • Baking powder – Make sure it’s not expired so the batter rises properly.
  • Baking soda – Don’t overmeasure; it can leave a bitter taste if heavy-handed.
  • Salt – I cook with kosher salt.
  • Buttermilk – Full-fat buttermilk gives the best tender texture; shake well before using.
  • Eggs – Large or extra-large eggs both work in this batter.
  • Butter – Salted butter; melt it and let it cool slightly so it doesn’t scramble the eggs.
  • Vanilla extract – I bake almost exclusively with artificial vanilla extract, but use what you’re comfortable with.

Begin by preheating your oven to 400°F.

Cook the sausage according to the package directions, then set it aside to cool slightly before handling.

In a large bowl, combine the flour, sugar, baking powder, baking soda, and salt. Stir until evenly mixed.

In a separate bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until well combined.

Pour the wet ingredients into the flour mixture and stir until incorporated. Scrape down the sides of the bowl as needed. Some small lumps in the batter are perfectly fine.

Lightly coat a mini muffin tin with nonstick cooking spray.

Cut each sausage link into thirds and place one piece into the bottom of each muffin cup.

Fill each muffin cup with pancake batter, covering the sausage pieces. Continue until all of the cups are filled.

Bake at 400°F for about 8 to 10 minutes, or until the pancake bites are puffed and cooked through. Test with a toothpick if needed to ensure there is no raw batter remaining.

Remove the pancake sausage bites from the muffin tin and serve warm with syrup. Enjoy!
