Preheat your oven to 400-F
Cook the sausage according to the package directions. Set it aside to cool.
Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl.
Mix the buttermilk, eggs, melted butter, and vanilla extract in a smaller bowl
Add the wet ingredients to the flour mixture, and mix well. Scrape down the sides of the bowl; some small lumps are OK.
Spray a mini muffin tin with nonstick cooking spray.
Cut each sausage link into thirds. Put one piece of sausage in the bottom of each cup of the mini muffin pan.
Top up the muffin cup with pancake batter. Repeat until they're all full.
Bake the pancaked bites with sausage at 400-F for about 8-10 minutes or until they're puffed up and cooked through. Use a toothpick to test for raw batter.
Remove them from the muffin tin and enjoy with syrup!
