- Prepare tater tots according to the package instructions. I suggest using your air fryer for fast cooking time.
- Remove the casing from the sausage or use bulk sausage and cook the sausage in a skillet over medium heat.
- Add red bell pepper and green onion and cook for an additional minute.
- Remove the fat and transfer the sausage mixture to a bowl and set it aside for now.
- Whip the eggs with heavy whipping cream in a large bowl.
- Add a pinch of salt and pepper to the egg mixture.
- Melt the butter in the same skillet you cooked the sausage in, then add the whipped eggs and cream and cook until lightly scrambled.
