  • 1 cup cheddar shredded
  • 1 cup monterey jack cheese shredded
  • 10 flour tortillas 10-12 inch tortillas
  • salt and pepper

Instructions

  • Prepare tater tots according to the package instructions. I suggest using your air fryer for fast cooking time.
  • Remove casing from sausage or use bulk sausage and cook the sausage in a skillet over medium heat.
  • Add red bell pepper and green onion and cook for an additional minute.
  • Remove the fat and transfer the sausage mixture to a bowl and set it aside for now.
  • Whip the eggs with heavy whipping cream and a good pinch of salt in a large bowl.
  • Melt the butter in the same skillet you cooked the sausage in then add the whipped eggs and cream and cook until lightly scrambled.
  • Transfer the cooked eggs to the bowl with the sausage and toss lightly to combine.
  • Add 3-4 tater tots to the bottom of a tortilla, then add about 1/2 cup of the eggs and sausage mixture, top with some cheese, and roll into a burrito.
  • Set the rolled burritos on a baking sheet and freeze until solid, then transfer them to a zipper-topped bag and freeze for up to a month.
