- 10 eggs
- 1 pound breakfast sausage links casing removed or use bulk sauage
- 2 cups tater tots prepared according to the package directions
- 1/3 cup heavy whipping cream or milk
- 2 tablespoons unsalted butter
- 1 red bell pepper seeds and stem removed and diced
- 1/2 cup sliced green onions white and green parts
- 1 cup cheddar shredded
- 1 cup monterey jack cheese shredded
- 10 flour tortillas 10-12 inch tortillas
- salt and pepper
Prepare tater tots according to the package instructions. I suggest using your air fryer for fast cooking time.
Remove casing from sausage or use bulk sausage and cook the sausage in a skillet over medium heat.
Add red bell pepper and green onion and cook for an additional minute.
Remove the fat and transfer the sausage mixture to a bowl and set it aside for now.
Whip the eggs with heavy whipping cream and a good pinch of salt in a large bowl.
Melt the butter in the same skillet you cooked the sausage in then add the whipped eggs and cream and cook until lightly scrambled.
Transfer the cooked eggs to the bowl with the sausage and toss lightly to combine.
Add 3-4 tater tots to the bottom of a tortilla, then add about 1/2 cup of the eggs and sausage mixture, top with some cheese, and roll into a burrito.
Set the rolled burritos on a baking sheet and freeze until solid, then transfer them to a zipper-topped bag and freeze for up to a month.
