Bite-Sized Cheese Toasties

Out of the UK comes another tasty food tradition: toasties. People have been putting cheese on bread for ages, but toasties take it one step further. Making these the way my Irish grandmother did, these bite-sized Cheese Toasties are simple, humble, and so gosh darn good!

What Are Toasties?

Toasties come in all shapes and forms, but on this side of the planet, they’re more commonly referred to as grilled cheese or toasted cheese. But Cheese Toasties are so much more than just cheese on bread. When you mix shredded cheese with a few other ingredients and pile it on buttered bread and then bake them in the oven, magic happens.

These bite-sized Cheese Toasties are rich, savory, cheesy, buttery, crunchy, and delicious. They’re an easy snack, a quick appetizer, the perfect accompaniment to salads or soups, or add them to your selection of St. Patrick’s Day appetizers.

I make these toasties the way my Irish grandmother did – with a bit of egg in the filling. It lends creaminess, savoriness, and when it bakes with the cheese, it’s downright delicious.
