Tuesday — Air Fryer Popcorn Chicken

I keep a bag of these in the freezer for nights just like this one. Quick, crispy, and always a hit at my table.

Wednesday — Shrimp Scampi Pizza

I swap the usual red sauce for a garlic-butter shrimp scampi and it completely changes the pizza game. Sweet shrimp, melty cheese, and a crust with just the right amount of crisp.

Thursday — Sheet Pan BBQ Chicken Thighs

Everything goes on one sheet pan and into the oven together, no juggling multiple pots or timers. The chicken skin crisps up while the vegetables roast right alongside it.

Friday — Grilled Steak and Veggie Skewers

The marinade does most of the work here, so by the time these hit the grill, dinner is basically done. Just a few minutes over the flame and everything’s charred and tender.

This is the kind of meal I make when I want something that feels complete without a bunch of sides.

Sunday — Lemon-Dill Salmon Foil Packets

I let the grill do all the work on this one, foil packet and all. Bright lemon, fresh dill, and almost nothing to clean up afterward.
