Ingredients

  • Cooking oil
  • Sweet potatoes – Peel them taters! Peel the sweet potatoes and cut them into 1/2-inch dice for even and quick cooking.
  • Salted butter – I cook with salted butter but you can use unsalted butter and season at the end.
  • Red onion – I like red onion in this dish because it has a bit of a bite and some sweetness, but you can use whatever onions you have on hand.
  • Garlic – Please use fresh garlic and not jarlic. Garlic from a jar just doesn’t even taste like garlic.
  • Fresh thyme – Or ¼ teaspoon dried thyme.
  • Chipotle powder – You can also use a bit of smoked paprika or a pinch of cayenne.
  • Green bell pepper – Seeded and diced.
  • Pulled pork – This breakfast hash recipe is a GREAT use of leftover pulled pork!
  • Heavy cream – Totally optional but the cream ties it all together. It evaporates, mostly, and leaves all the flavor behind. Yum!
  • Large eggs – Optional.
  • Chives – For garnish.
  • Salt and pepper – To taste.

How To Make Sweet Potato Hash with Pulled Pork

  1. Heat the cooking oil in a large skillet over medium heat until shimmering. Add the diced sweet potatoes, lower the heat to medium-low, and cook, stirring often, for about 6 minutes or until the potatoes just start to soften.
  2. Sprinkle the sweet potatoes with salt and pepper, then add the butter, chopped onion, and minced garlic. Cook for an additional 2 minutes, stirring occasionally, until the onion starts to soften.
  3. Stir in the minced thyme, chipotle powder, green bell pepper, and pulled pork. Cook for 3–4 minutes, stirring occasionally, until the pork is heated through and the flavors are well combined.
  4. Pour in the heavy cream and let the mixture simmer for 1 minute. Adjust the seasoning with additional salt and pepper to taste if needed – taste first.
  5. For a complete meal, use a spatula to create 4 shallow indentations in the surface of the hash. Crack an egg into each indentation, sprinkle with salt and pepper, and cover the skillet. Cook over medium-low heat until the egg whites are set but the yolks remain runny.
