I hope you had a great long weekend! After all the grilling and prepping and hosting, I wanted dinners that basically run themselves. Air fryer, instant pot, foil packets, sheet-style stuffed peppers — easy entrees, every single night.

Monday — Air Fryer Honey Garlic Chicken Thighs

Sticky, garlicky chicken thighs that crisp up in the air fryer with almost no effort. After a full week of holiday cooking, this is exactly the kind of easy I’m craving.

Tuesday — Baked Feta Pasta

One block of feta, a pan of cherry tomatoes, and the oven does the rest until it all turns into a creamy sauce. I still can’t believe how little work this one takes.

Wednesday — Chicken Tinga – Instant Pot

Shredded chicken simmered down in a smoky, slightly spicy tomato sauce until it’s fall-apart tender. I love having this in tacos, on nachos, or straight over rice.

Thursday — Pork Chops with Tomato & Green Onion Relish

This is the recipe I reach for when it’s too hot to stand over the grill babysitting anything. Wrap it up, toss it on, and the salmon comes out perfectly every time.

Saturday — Taco Stuffed Tomatoes

Seasoned beef and melty cheese stuffed into tomatoes instead of tortillas for a lighter spin on taco night. Quick, low-carb, and just as satisfying as the real thing.

Sunday — Lemon Chicken Orzo Skillet with Broccoli

Chicken thighs get a golden sear before the orzo and broccoli go in to finish everything together in the same pan. Sunday dinner doesn’t always have to be a production and this one proves it.

That’s seven nights of dinner figured out for you. None of these recipes are going to ask much, which feels right after the week we just had. Don’t forget to grab your shopping list.
