Shrimp scampi pizza on a pizza stone.

ingredients

  • Pizza pan or stone
  • Pizza dough – Either homemade from my pizza dough recipe, or store-bought.
  • Shrimp – Medium shrimp are easiest to cook evenly; larger shrimp need a little extra time.
  • Butter – Unsalted is safest so you can control seasoning.
  • Olive oil – A good-quality extra-virgin olive oil adds flavor; neutral oils can substitute.
  • Garlic – Fresh only; jarlic changes the flavor profile.
  • Red pepper flakes – Use lightly; you can increase if you like more heat.
  • Green onion – I slice thinly on the bias; the white part cooks better, the green adds fresh color.
  • Lemon juice – Always fresh; bottled juice dulls the brightness of the pizza.
  • Parsley – I prefer flat-leaf parsley for garnish; it holds up better than curly.
  • Parmesan cheese – Freshly grated melts better than pre-shredded. Use your rotary cheese grater and power through the grating.
  • Feat cheese – I crumble it myself; pre-crumbled can be too dry and may not melt nicely.

How To Make This Tasty Shrimp Pizza

Stretch the pizza dough onto a pizza pan and let it rest while you prepare the topping. This helps the dough relax so it bakes evenly.

Melt the butter and olive oil in a skillet over medium heat. Add the garlic and cook for about 1 minute, just until fragrant. Add the shrimp and cook for 2–3 minutes, turning once, until pink and just cooked through. Remove the skillet from the heat.

Stir in the lemon juice, red pepper flakes, green onion, and parsley. Season with salt, especially if using unsalted butter. Let the mixture cool slightly while you pre-bake the crust.

Preheat the oven to 450°F. Bake the pizza dough for about 5 minutes, just until set but not browned, then remove it from the oven.

Spoon a little of the buttery sauce from the skillet over the crust. Top evenly with the shrimp mixture, then sprinkle with feta and Parmesan.

Return the pizza to the oven and bake for 6–7 minutes, until the crust is golden around the edges and the cheese is melted. Slice and serve hot.

Chef Jenn’s Tips

  • Shrimp is the star of this recipe, so use good-quality shrimp! See my notes above for what kind of shrimp to use.
  • Red pepper flakes add a touch of heat to this dish, but go easy! Start with just a tiny pinch unless you know you love the heat.
  • Feta adds a lovely saltiness to the pizza and balances out the flavor, but you can skip the butter and cheeses if you want to go dairy-free.
  • Want to make shrimp scampi pizza on the grill? Just fire up your grill and precook the pizza dough on a medium-high grill then top it and finish cooking it on a low heat with the lid closed until cooked through.

Make it a Meal

Honestly, you don’t need much! I’d serve this tasty pizza with a garden salad and a nice dressing. Or, you can turn it into a flatbread by stretching the dough into an elongated oval and serving it as an appetizer or hors d’oeuvre. Make it a pizza night with Birria Pizza and a homemade pepperoni lover’s deep dish pizza, and don’t forget Crumbl Confetti Cake Cookies for dessert!

  • Roll or stretch the pizza dough out onto a pizza pan, pizza stone, or sheet pan. Bake it in a 450-F oven for about 6 minutes or until the crust has started to set.
  • Meanwhile, make the shrimp. Add the butter and olive oil to a skillet and heat over medium-high heat. When the foaming subsides, add the garlic and cook for a minute until fragrant.
  • Add the shrimp and cook for 2-3 minutes, or until cooked. Turning as necessary.
  • Add the green onion and parsley, and remove from the heat. Add the red pepper flakes and lemon and season with salt if needed.
  • Using a spoon, spoon out some of the butter mixture and spread that over the par-baked pizza crust. Top with the shrimp mixture, making sure to evenly distribute the shrimp.
  • Top with crumbled feta and sprinkle on the Parmesan cheese.
  • Bake for an additional 6-7 minutes or until the crust is cooked through. Slice and enjoy!
