Weekly Meal Plan #67

Meal prep is how I make a busy week feel manageable before it even starts. Put on some music, fill the fridge, and let the weeknights take care of themselves.

Bigger batches can mean a bigger grocery run, but your shelves may already hold a few staples. The list below fills in the gaps.

Monday — Tini’s Mac & Cheese with a Twist

A square casserole dish filled with baked macaroni and cheese, with a spoon holding a portion above it.

Loosen your belt buckle, because this diet-busting mac and cheese is worth every calorie. It’s ideal for potlucks and gatherings, and the leftovers keep in the fridge for up to three days.

Tuesday — Cheesy Mexican Chicken Casserole

A Cheesy Mexican Casserole topped with melted cheese, jalapeño slices, diced tomatoes, and chopped herbs, with a serving spoon placed on the side.

This casserole has plenty of Tex-Mex flavor without being too spicy, and extra chipotle powder or jalapeño turns up the heat if you want it. I love how loaded it is with veggies too.

Wednesday — Tuscan Soup with Sausage

A white bowl of Creamy Tuscan Soup With Sausage & Kale.

This Tuscan sausage and kale soup ticks all my boxes, because I’m a huge soup fan. Freeze it in meal-sized portions for up to three months and a good dinner is always on hand.

Thursday — Best Ever Giant Meatballs

A fork holding a cut piece of giant meatball over a plate of spaghetti topped with massive meatballs, marinara sauce, and garnished with grated cheese and basil leaves.

For ages I struggled to find meatballs that were tender, juicy, and flavorful without falling apart, and this simple recipe finally nailed it. A handful of pantry staples is all it takes.

Friday — Easy Skillet Lasagna

Skillet lasagna served in a black bowl.

Lasagna has always been a favorite comfort food in my house, but it’s usually saved for special occasions. This skillet version is a game-changer that fits right into busy weeknights.

Saturday — Sauerkraut Soup with Kielbasa

A bowl of cabbage soup with sausage, carrots, potatoes, and fresh herbs, topped with a dollop of sour cream, with a spoon resting in the bowl.

My pot makes six servings, and the flavors deepen overnight, so leftovers are even better. Everything simmers together in a single pot, and bold flavor comes with very little effort.

Sunday — Skillet Gnocchi with Sausage & Broccoli Rabe

Gnocchi with sausage and tomatoes on a plate.

Skillet meals are a frequent dinner in my house, and this one is a family favorite. The sauce is so light and good you’ll want to lick your plate clean.

Here’s to leftovers that actually taste good and a week that runs a little smoother. The details are above.
