Weekly Meal Plan #61

Grocery prices don’t care what week it is, but your dinner plan can still work around them. What’s on this meal plan leans on affordable staples that stretch further than you’d expect, without any drop in flavor.

A collage of six homemade dishes surrounds a blue banner reading “Weekly Meal Plan #61 + Shopping List,” featuring casseroles, baked goods, vegetables, and meatballs.

Half the savings happen before you even get to the store. Take stock of your pantry first, then grab the list below.

Monday — Cheeseburger Pie

A slice of cheeseburger pie topped with shredded lettuce, diced tomato, onions, and pickles, served with potato chips on a white plate.

Everything you love about a cheeseburger ends up baked into one pan, pickles and all if you pile them on after. It’s the burger night that doesn’t require the grill.

Tuesday — Chicken Fried Rice

Chicken fried rice topped with sliced green onions, served on a white plate.

Got day-old rice sitting in the fridge? This is exactly what it’s for. A screaming hot Blackstone gets it popping and crisping in a way no indoor skillet can match.

Wednesday — Southern Ground Beef & Baked Bean Casserole

A square baking dish filled with Southern Ground Beef & Baked Bean Casserole and topped with strips of cooked bacon; a wooden spoon holds a serving.

I grew up eating casseroles just like this one at church suppers, and every bite still takes me straight back. Beans soak up all that beefy flavor while bacon crisps up perfectly under the broiler.

Thursday — Homemade SpaghettiOs Recipe

A bowl of pasta with tomato sauce and grated cheese, garnished with parsley. A fork holds a bite-sized portion above the bowl.

The tomato paste goes deep brick-red before the rings finish cooking right in the sauce with real butter and cheese. There’s no going back to the can after this.

Friday — Homestyle Hamburger Stew

A pot of classic hamburger stew and a wooden spoon.

Some of my best recipes started as “what’s in the freezer” nights, and this stew is one of them. It’s only gotten better the more I make it.

Saturday — Sheet Pan BBQ Chicken Thighs

Roasted baby potatoes, green beans, corn on the cob, and barbecue chicken arranged on a tray.

The oven does all the multitasking on this one instead of me. Everything goes in together, and what comes out is juicy chicken with vegetables roasted right alongside it.

Sunday — Mississippi Meatballs

A close-up of Mississippi meatballs, coated in a rich, savory sauce and garnished with pepperoncini peppers fresh chopped parsley.

I don’t like the spongy, chemical taste of frozen meatballs, so I make mine from scratch every time. It’s worth the extra ten minutes for how much better the texture turns out.

Groceries are planned, dinners are covered, and your wallet barely felt it. Grab the list and get started whenever you’re ready.
