- Queso Blanco Velveeta cheese – Cut it into small, even cubes so it melts faster and smoother. Don’t substitute with shredded cheese—Velveeta’s formulation is what keeps the dip creamy and prevents it from breaking.
- Rotel tomatoes with green chiles – Drain it well or the dip will be watery and thin. Mild or hot Rotel both work, depending on your heat preference.

Cook the ground beef in a skillet, breaking it apart as it browns. Once it’s fully cooked, drain off the excess grease. Drain it well here, because any grease left in the pan pools on top of the finished dip.

Add the cubed processed white cheese to the skillet with the beef. Cut it into small cubes before it goes in, the smaller the cubes the faster and more evenly they melt.

Pour in the drained diced tomatoes with green chiles and stir everything together. Drain them well first, or the extra liquid thins the dip out.

Stir constantly over low heat until the cheese melts completely into a smooth, creamy dip. Keep it low and keep stirring. Rush it on high heat and the cheese scorches on the bottom before the rest catches up.

Serve immediately, while it’s hot and pourable, with tortilla chips, crackers, or fresh-cut vegetables.
