Weekly Meal Plan #66
I will never get tired of comfort food, especially now that the evenings close in early. It’s the kind of dinner I want waiting for me at the end of a long day.

Chances are the basics are already on your shelves. Take a look, then use the list below to fill in the rest.
Monday — Creamy Slow Cooker Beef Stroganoff
Start it at 9 a.m. and walk away, and dinner is a real Sunday-style meal by evening. Wide egg noodles go on about twenty minutes before you eat, and they hold the gravy beautifully.
Tuesday — Chicken and Cheddar Dumplings
Ho-hum dumplings never stood a chance once I jazzed up the classic with sharp cheddar and chives. These turned into light, fluffy, show-stopping dumplings that everyone will want more of, spoonful after creamy spoonful.
Wednesday — Guinness-Braised Beef Short Ribs
Nobody will believe how simple these short ribs are, because they taste like they took all day. Most of the work happens in one pot, and the oven handles the rest while I relax.
Thursday — Meatball Soup
A big pot of this soup works for weeknight dinners, lunches, meal prep, and freezer-friendly emergency meals, which is why I love making it. Prep the meatballs ahead and busy nights get a lot easier.
Friday — Southern Ground Beef & Baked Bean Casserole
Potlucks and barbecues are where this casserole shines, and the recipe feeds a crowd. I love how simple it is to bring classic Southern comfort right to the dinner table.
Saturday — Chef Jenn’s Sheet Pan Bratwurst & Potatoes
Hearty comfort food made simple is my kind of dinner, and this sheet pan delivers. Juicy brats brown beside golden mustard-glazed potatoes and sweet peppers, with only one pan to wash.
Sunday — Shrimp & Corn Chowder with Chipotle
I’ve been making this chowder for more than twenty years, back to my deli days in Texas. It’s my favorite soup in the whole wide world, and I keep some in the freezer.
Put something good on the stove, pour a drink, and let the house fill up with great smells. Everything you need is linked above.
