Weekly Meal Plan #65

Fall recipes are the reason I’m happy to see the oven back on. Once the air turns crisp, I want dinners that feel warm and settled, the kind that make the kitchen the best room in the house.

A collage of six different meals including salad, a meat and potato dish, a baked casserole, chicken with vegetables, a fruit tart with ice cream, and a bowl of soup, with text reading “WEEKLY MEAL PLAN #65”.

The list below keeps the store trip short, and a quick look at your shelves makes it even shorter.

Monday — Creamy Chicken Tortilla Soup With Beans

Two bowls of creamy soup with chicken, black beans, corn, and vegetables, garnished with cilantro. Lime wedges and spoons are in the background.

Yes, there are a lot of ingredients in this soup, and no, that shouldn’t stop you. A chopper does the hard work, and before long you’re digging into a bowl of Southwestern goodness.

Tuesday — Taco Stuffed Tomatoes

A plate of Taco Stuffed Tomatoes.

Prepped tomatoes on a platter let everyone add their own jalapeños, black olives, or avocado. It turns taco night into a casual build-your-own gathering that friends and family always enjoy.

Wednesday — Shepherd’s Pie Baked Potatoes

A fork holds a bite of Shepherd’s Pie Stuffed Baked Potatoes on a white plate with additional loaded potatoes in the background.

Shepherd’s pie fans, this one is for you, with all the classic flavor tucked into a crispy baked potato shell. The golden mashed potato topping adds a slightly crisp finish.

Thursday — Lemon Chicken Orzo Skillet with Broccoli

A Lemon Chicken Orzo Skillet with Broccoli dish featuring golden-brown seasoned chicken thighs on a bed of orzo pasta, garnished with fresh broccoli florets, diced tomatoes, chopped parsley, and lemon slices in the background.

Even as a retired chef, simple family-friendly meals like this are what float my boat. Everyone at the table loves it, and I love how little there is to wash.

Friday — Crock Pot Sausage and Peppers

Five cooked Crock Pot Sausage and Peppers served on a white rectangular dish, garnished with chopped herbs.

Red, yellow, and green peppers make this pot as pretty as it is hearty. My family loves it, and I always make extra because the leftovers taste even better the next day.

Saturday — Mississippi Meatballs

Mississippi meatballs served in a bowl, garnished with fresh parsley and pepperoncini peppers for a flavorful finish.

Comfort food 101 looks like this: real meatballs, tangy pepperoncini, and gravy made right in the slow cooker. Spoon it over mashed potatoes or buttered egg noodles and let the sauce do its thing.

Sunday — White Chicken Enchiladas

Two creamy, cheese-topped chicken enchiladas garnished with small pieces of parsley on a white plate.

Staring into the fridge at 5 p.m. with a rotisserie chicken and no plan? These enchiladas turn it into a creamy, cheesy green chile dinner that everyone wants on repeat.

Fall only comes around once a year, so I’d make the most of it. Your plan is all set above.
