Wednesday — Skillet Stroganoff Pie
Baking the potatoes first is what keeps the mashed topping from turning watery, and it’s the one step I wouldn’t skip. Everything else comes together in a single cast iron skillet.
Thursday — Instant Pot Italian Chicken
Lemon is the quiet hero in this pot, brightening a creamy sauce full of zucchini and bell pepper. The Instant Pot handles the chicken while I stay out of its way.
Friday — Homemade Cheeseburger Hamburger Helper

Saturday — Salmon Gnocchi Bake
It’s a one-dish seafood bake, with the salmon nestled right on top of the gnocchi as it goes into the oven. I pull it out when the fish reaches 125°F.

When I don’t feel like thinking on a Sunday, this is the dinner I make, ready in about fifteen minutes from cold rice. Eggs and crispy garlic make it a whole meal.
