Monday — Slow Cooker Hatch Chili Salsa Chicken

I’ve tested this both ways, and while I love chicken breast for how easily it shreds, thighs bring more flavor to the pot. Either way, it eats like something you actually planned.

Tuesday — Oven Roasted Lamb Chops with Rosemary and Garlic

A hot oven and a handful of ingredients are all this one asks of you. I’d serve this to company without blinking.

Wednesday — Creamy Vegetable Chowder

It tastes like it simmered all afternoon, but it’s done in well under an hour. I love serving it in a bread bowl when I want to make it feel like a bit more of an event.

Thursday — Frikadellen – German Meat Patties

A mix of beef and pork gets bulked up with soaked bread and grated onion, then fried until the crust turns deep golden. These are just as good cold in a sandwich the next day as they are hot off the skillet.

Friday — Slow Cooker Mississippi Chicken

This one is comfort food straight up my alley, easy, few ingredients, ready when I am. I always double it so half goes in the freezer.

Saturday — Authentic Hungarian Goulash

There’s not a lot going on ingredient-wise, but the combination is pure magic once it’s had hours to come together.

Sunday — Best Ever Giant Meatballs

Over spaghetti, in a sub, or straight off the plate, these disappear every single time I make them. They hold up beautifully in the fridge, too, which makes the week ahead a little easier.
