Monday — Cheesy Spanish Rice

This is the dish my whole family goes a little crazy for, and the leftovers might be even better than the first night. Cheesy, smoky, and always disappears fast.

Tuesday — Broiled Prime Rib & Roasted Asparagus

Broiling is basically upside-down grilling, and it’s a technique that deserves way more credit than it gets. Ten minutes total and dinner looks like it came from somewhere fancy.

Wednesday — Creamy Chicken Tortilla Soup

This is the Sunday dinner that requires almost nothing from you once it’s in the pot. Walk away, come back, and dinner’s completely done.
