Weekly Meal Plan #55

Summer heat means one rule in my kitchen: keep the cooking short and the oven closed. This week sticks to that rule every single night, no exceptions, because the last thing anyone needs in August is more time standing over a hot stove. Minimal cooking, maximum flavor.

Monday — Pastrami Reuben Sandwich

A homemade pastrami sandwich on marble rye with fries on the plate.

This one comes together open-faced under the broiler, so it’s in and out in minutes. Tangy, cheesy, and better than anything from a deli counter.

Tuesday — Buffalo Chicken Lettuce Wraps

A plate of lettuce wraps filled with shredded chicken and drizzled with a creamy white sauce, with a fork and a striped cloth in the foreground.

I love how little heat this one needs to come together. Spicy, cool, and crunchy all in one bite, ready in ten minutes flat.

Wednesday — Philly Cheesesteak Sandwiches

Two Philly cheesesteak sandwiches with sliced beef, green bell peppers, mushrooms, and melted cheese on hoagie rolls, served on a white plate.

When there’s leftover roast, this is my favorite way to turn it into something that tastes like it came from a sandwich counter. Fifteen real minutes of cooking and dinner’s done.

Thursday — Reuben Quesadillas

Reuben quesadilla slices are arranged in a circle around a black bowl of creamy dipping sauce, garnished with chopped parsley on a round plate.

Everything happens right on the griddle with this one so there’s no oven heat added to the kitchen. Crispy, cheesy, and tangy in every bite.

Friday — Instant Pot Italian Chicken

Sliced cooked chicken breast with zucchini, diced red bell pepper, and chopped parsley, served in a creamy sauce on a white plate.

Some nights call for a dinner like this that doesn’t need the stove running at all. Set it, forget it, and dinner’s ready with almost no effort.

Saturday — Cheez-It Tostadas

Cheez-It Tostada on a white plate.

Making the cracker bases ahead of time turns assembly day into just piling on toppings. It’s the kind of dinner that feels like a project without actually being one.

Sunday — Grilled California Chicken Burger

A sandwich with lettuce, tomato, cheese, and sliced meat in a bun, served on a plate with potato chips.

Letting the grill handle everything keeps the heat out of the kitchen entirely. Even the cheese melts without you lifting a finger indoors.

Everything’s lined up for a low-heat week. List’s ready, recipes are linked. This is summer eating without the sweat.
