Bite-Sized Cheese Toasties

Out of the UK comes another tasty food tradition: toasties. People have been putting cheese on bread for ages, but toasties take it one step further. Making these the way my Irish grandmother did, these bite-sized Cheese Toasties are simple, humble, and so gosh darn good!

What Are Toasties?

Toasties come in all shapes and forms, but on this side of the planet, they’re more commonly referred to as grilled cheese or toasted cheese. But Cheese Toasties are so much more than just cheese on bread. When you mix shredded cheese with a few other ingredients and pile it on buttered bread and then bake it in the oven, magic happens.

These bite-sized Cheese Toasties are rich, savory, cheesy, buttery, crunchy, and delicious. They’re an easy snack, a quick appetizer, the perfect accompaniment to salads or soups, or add them to your selection of St. Patrick’s Day appetizers.

I make these toasties the way my Irish grandmother did – with a bit of egg in the filling. It lends creaminess, savoriness, and when it bakes with the cheese, it’s downright delicious.

What You’ll Love About Bite-Sized Cheese Toasties

  • These are the perfect appetizers – easy, simple, and delish!
  • Prepare the topping ahead of time and bake before serving.
  • Everybody loves these crave-worthy treats!

Ingredients

  • Baguette – Cut into ½-inch thick (or thinner) slices. Day-old bread toasts up crispier than fresh bread. If using fresh, toast it lightly first before adding toppings.
  • Butter – Softened. – I use salted butter. Unsalted butter works if you add a pinch of salt.
  • Eggs – Large eggs. Extra-large works without adjustment.
  • Dijon mustard – Yellow mustard works in a pinch, but Dijon has better tang and won’t make the mixture watery.
  • Worcestershire sauce – Adds umami and depth. Don’t skip it.
  • Irish cheddar – I recommend shredding your own cheese. Pre-shredded cheese is coated with anti-caking agents that make it gritty and prevent smooth melting. Regular sharp cheddar works if you can’t find Irish cheddar.

How To Make Easy Cheese Toasties

Start by preheating the oven to 425°F and lining a baking sheet with parchment paper if desired for easier cleanup. Slice the baguette into even pieces. Spread butter on one side of each slice and arrange them on the baking sheet with the buttered side facing down.

In a mixing bowl, combine the eggs, Dijon mustard, Worcestershire sauce, and shredded Irish cheddar cheese. Stir until everything is evenly mixed and the cheese is coated in the egg mixture.

Spoon a generous tablespoon of the cheese mixture onto each slice of bread. Depending on the size of your baguette slices, you may be able to use a little more. Spread the mixture evenly from edge to edge, making sure the topping isn’t too thin.

Bake for 6 to 8 minutes, or until the topping is puffed and lightly golden brown on top. Remove the toasties from the oven and let them cool for a minute or two before serving.

Serve warm and enjoy.

Ooh, that little bit of tanginess from the Dijon and Worcestershire was amazingly good. These are dangerous! And I’ll be making them all the time lol

These toasties (cute name) are such an easy snack! I didn’t have the irish cheddar but used a white cheddar instead. The dijon was unexpected and made them unique.
