When selecting ingredients, opt for high-quality white chocolate with at least 30% cocoa butter content. This ensures a smooth, even melt and a deliciously rich flavor. Avoid cheaper alternatives with vegetable fats, as they can give the chocolate a waxy texture and affect the final result.

Ingredients

- White chocolate-covered almonds – You can also use yogurt-covered almonds. These form the bunny ears, so look for evenly shaped, oval ones.
- Coconut Raffaello chocolates – Or any coconut-covered round bite-sized treat. These are the bunny heads—make sure they’re round and uniform for the cutest look.
- Almonds – Plain whole almonds. Used for additional details. Pick ones with no broken tips so they look neat.
- Snowflake sprinkles – For decoration. Any small white sprinkle works if you can’t find snowflakes.
- Walnut halves – Used as a base or body. Choose intact halves, not crumbled pieces, so they hold their shape.
- Green chocolate shards – Or colored coconut shavings to decorate. These mimic grass. Don’t use fresh herbs or anything perishable—the treats need to keep.
- White candy melts – Use candy melts or almond bark for the “glue” to hold pieces together. Don’t use white chocolate chips—they won’t set firm enough to hold the pieces in place.
How to Make Coconut Easter Bunny Treats
Trim the walnuts and coconut balls slightly with a sharp knife to create flat surfaces where they will be joined.

Melt the white candy melts using a double boiler or microwave in 15-second increments, stirring until smooth.
Coat the walnut and coconut candy connection points with melted white chocolate and press them together. Chill for 15 minutes to set.

Drop a small amount of melted chocolate on top of each Rafaello ball. Press a white chocolate-covered almond onto the chocolate to form the lamb’s face.
Attach the ears by “gluing” almond slices on either side of the almond face with melted white chocolate. Use snowflake sprinkles to create the lamb’s bangs. Chill the candies until the chocolate sets completely.

Draw faces on the lambs using a water-based food marker. Get the kids involved in this creative step—they’ll love decorating their own little lambs!

Sprinkle a serving plate with green chocolate shards or colored coconut shavings. Arrange the lamb candies on top and serve.
Chef Jenn’s Tips
- Replace walnuts with pecans for a slightly sweeter, buttery flavor.
- Swap almond slices with small cornflakes for a fun variation.
- Store these candies in an airtight container in the fridge if making them ahead of time.
