Coconut Easter Bunny Treats

Coconut Easter Candy Treats are adorable homemade sweets made with coconut Raffaello candies, white chocolate, and nuts. Easy to assemble and perfect for celebrating Easter!

Ingredients

  • 6 white chocolate-covered almonds
  • 9 coconut Raffaello chocolates
  • almonds sliced
  • 1 teaspoon snowflake sprinkles
  • 9 walnut halves
  • 2-3 teaspoons green chocolate shards or colored coconut shavings to serve
  • ¼ cup white candy melts

Instructions

  • Trim the walnuts and coconut balls slightly with a sharp knife to create flat surfaces where they will be joined.
  • Melt the white candy melts using a double boiler or microwave in 15-second increments, stirring until smooth.
  • Coat the walnut and coconut candy connection points with melted white chocolate and press them together. Chill for 15 minutes to set.
  • Drop a small amount of melted chocolate on top of each Rafaello ball. Press a white chocolate-covered almond onto the chocolate to form the lamb’s face.
  • Attach the ears by "gluing" almond slices on either side of the almond face with melted white chocolate. Use snowflake sprinkles to create the lamb’s bangs.
  • Chill the candies until the chocolate sets completely.
  • Draw faces on the lambs using a water-based food marker. Get the kids involved in this creative step—they'll love decorating their own little lambs!
  • Sprinkle a serving plate with green chocolate shards or colored coconut shavings. Arrange the lamb candies on top and serve.
