What is Cauliflower Rice?

There’s no “rice” in cauliflower rice. Instead, it is named that because of the rice-like texture that forms from the cauliflower when you pulse it in a food processor. No food processor? No worries, this handy gadget makes quick work of making cauliflower rice out of cauliflower.

How To Make Cauliflower Rice

Use a cauliflower ricer or a food processor to make your own cauliflower rice from fresh, whole cauliflower. You can also buy it pre-made in the grocery store, both in the fresh and frozen food aisles. Honestly? The frozen stuff is more expensive (and the fresh cauliflower rice is even more expensive.) Buy a head of cauliflower, trim it up and quarter it. Pulse it in the food processor a few times until it is crumbly. There, you just made cauliflower rice for so much cheaper than the premade kind.

And just as a warning, take it from one who knows: you can’t make good cauliflower rice from frozen and thawed cauliflower. You’ll end up with a goopy mess. It just won’t work in this vegan Mexican rice recipe.

What You Need To Make Vegan Mexican Rice with Cauliflower

  • Olive or avocado oil – I usually cook with olive oil, but avocado oil works great too.
  • Yellow onion – Yellow onion gives the best balanced flavor.
  • Garlic – Use fresh garlic cloves. Skip jarlic; it won’t give the same flavor.
  • Cauliflower rice – About ½ head of cauliflower riced, or roughly 4 cups. Fresh works best, but frozen cauliflower rice will work if thawed and drained well.
  • Tomato paste – Adds rich tomato flavor and helps give the rice its color.
  • Taco seasoning – Use your favorite blend. I like a salt-free mix so I can control the seasoning.
  • Cumin – Adds warm, earthy flavor; a little goes a long way.
  • Salt and pepper – Season to taste.
  • Vegetable broth – Use a low-sodium vegetable broth so you can control the salt level.
