Back in the day, I’d have the team make millions of these tasty treats and wrap them up in pretty wrapping with a bow and we’d sell them in the restaurant. They’re the perfect gift – a little something to tell someone you care, and they’re not cake pops!

A combination of white chocolate and red velvet cake mix is drizzled with white chocolate and topped with festive sprinkles for the perfect holiday dessert. If you think that sounds good, just wait until you taste them. You could also use red or pink sprinkles to turn them into Valentine’s Day Red Velvet Truffles to share with that special someone!

WHAT ARE TRUFFLES?

Let me be very clear: we are NOT talking about the fungus kind here! The dessert kind of truffle is a bite-sized treat made from ganache, which is melted chocolate mixed with cream. They’re often coated in more chocolate, like our drizzle, but some are also rolled in chopped nuts or sprinkles. I like to add Christmas sprinkles on top for that extra pop of color! They’re rich, festive, and melt-in-your-mouth delicious!

Ingredients

  • White chocolate chips — You could also use meltable wafers if you prefer.
  • Sweetened condensed milk — This is not the same as evaporated milk.
  • Vanilla — The higher quality, the better the final product.
  • Red velvet cake mix
  • Christmas sprinkles

HOW TO MAKE RED VELVET TRUFFLES

  1. Add the sweetened condensed milk, vanilla, and 2 cups of white chocolate chips to a microwave-safe bowl.
  2. Microwave in 30-second intervals, stirring between each to help the chocolate melt evenly, until the mixture is smooth.
  3. Add the red velvet cake mix to the bowl and stir until the color is uniform.
  4. Transfer the batter to the freezer for at least 30 minutes until it holds its shape when scooped.
  5. Scoop the batter with a cookie dough scoop, then roll each scoop into a smooth ball. Set aside on a baking sheet lined with parchment paper.
  6. Melt the remaining white chocolate chips using the same process of 30-second intervals and frequent stirring.
  7. Scoop the melted chocolate into a small zipper-top baggie, cut off the corner, then drizzle the white chocolate over the truffles.
  8. Add the Christmas sprinkles before the white chocolate drizzle hardens.

WAYS TO MAKE WORKING WITH CHOCOLATE LESS MESSY

Chocolate has a tendency to get everywhere. If you’re trying to reduce the mess and stickiness, one option would be to use disposable gloves while you work. This will keep your hands clean so you don’t have to wash them every time you need to touch something else.

You can also use a piping bag instead of a zipper-topped with the corner cut out. Not everyone has piping bags available, so I like to include the DIY method, but if you have some in your kitchen, go ahead and use them!

If you have a double boiler, that can also be less messy than melting chocolate in the microwave. And if you prefer to use melting wafers instead of chocolate chips, these are great for getting that smooth consistency with minimal stirring.

Do you want the actual eating part to be less messy? Add a stick to the center of your red velvet cake truffles to turn them into cake pops!

Storage

Store any leftover red velvet truffles in an airtight container on the counter for 2-3 days. You can also freeze these; just thaw them before eating.
