Ingredients

- Corn Chex – Or any flavor Chex. I’ve tried them all and my least favorite was whole wheat Chex, but they all work!
- Mini pretzel twists – Keep the pretzels small. Big rods won’t work as well.
- Lucky Charms cereal
- White melting wafers – You can also use white chocolate chips but watch you don’t overheat them or the chocolate will seize.
- Mini marshmallows – The wee little dehydrated marshmallows.
- Green M&Ms
- Rainbow sprinkles – Or any kind of sprinkles.

Line a baking sheet with parchment or a silicone mat and set it aside. Do this first, before anything melts. Once the wafers are warm you want to move fast, and you don’t want to be hunting for parchment with a bowl of setting coating in your hand.
Combine the corn cereal squares, mini pretzels, marshmallow oat cereal, and mini marshmallows in a large bowl. Use a bigger bowl than you think you need so you have room to toss without flinging cereal across the counter.

Melt the white coating wafers in a microwave-safe bowl in 30-second bursts, stirring between each one until smooth. Don’t rush it with longer intervals. White coating scorches fast, and once it seizes there’s no bringing it back.
Drizzle the melted coating over the cereal mixture and stir gently to coat everything. Fold rather than stir hard here, or the pretzels and cereal break up into crumbs.

Spread the mixture onto the prepared sheet in an even layer. Thinner is better, it sets faster and breaks into cleaner pieces.
Sprinkle the green candy-coated chocolates and rainbow sprinkles over the top while the coating is still wet. Add them now, not after it sets, or they won’t stick.

Let it sit about 30 minutes, until completely set and hardened. Resist breaking it early. Pull it apart before it’s fully set and the coating smears instead of snapping. Once it’s hard, break it into bite-sized pieces and serve.

Chef Jenn’s Tips
- For a brighter green hue, mix a few drops of green food coloring into the melted white chocolate before coating the cereal.
- Let the kids get involved—they’ll have fun stirring and adding the sprinkles!
- Using parchment paper or a silicone mat makes cleanup easier and keeps the mixture from sticking.
Serving Suggestions
This treat stands on its own but can be part of a festive St. Patrick’s Day spread. Pair it with green velvet cupcakes, shamrock-shaped cookies, or a colorful fruit platter. It also makes a fun dessert after classic Irish dishes like shepherd’s pie or corned beef and cabbage. For drinks, try serving it with a shamrock shake or green lemonade!

Storage
For the best texture, store Leprechaun Bait in an airtight container at room temperature for up to three days. If you’re in a warm or humid area, keep it in the fridge to prevent the chocolate from softening.
