  • Cream cheese – Must be softened to room temperature or you’ll get lumps. Don’t microwave it soft—it’ll get too warm, and the cheese ball won’t hold its shape.
  • Cheddar cheese – I like sharp cheddar for the most flavor. Shred it yourself—pre-shredded cheese is coated with anti-caking agents that make it gritty and won’t blend smoothly.
  • Bacon bits – You can buy precooked crumbles or make them yourself. Homemade bacon crumbles taste far better than the shelf-stable kind—cook until crisp and crumble.
  • Pecans – Toast the pecans first for extra crunch. Don’t skip toasting—raw pecans taste bland and lack the depth that toasted ones have.
  • Green onions Use both white and green parts.
  • Milk – Just a splash to loosen the mixture if it’s too stiff to blend. Add a teaspoon at a time.
  • Everything But The Bagel Seasoning – Adds salty, savory crunch. Use it in the mix and for rolling the outside of the cheese ball.
  • Onion powder – Not onion salt, or the cheese ball will be too salty.
  • Garlic powder – Not garlic salt, or the cheese ball will be too salty.
  • Salt – I use Kosher salt.
  • Black crushed pepper – Freshly cracked black pepper tastes best, but pre-ground works.

How to Make Pecan Bacon Cheeseball

Add the softened cream cheese, shredded cheddar, everything bagel seasoning, onion powder, garlic powder, milk, salt, and pepper to a medium bowl. Make sure the cream cheese is fully softened to room temperature first, or you’ll fight cold lumps that never quite smooth out.

Mix the ingredients.

Mix with a hand mixer until smooth and well combined. A hand mixer beats stirring by hand here, it works the seasonings evenly through the cream cheese instead of leaving pockets.

Stir in half the bacon bits, half the green onions, and half the chopped pecans. Save the other half of each, that’s your coating, so don’t fold everything in now.

Lay a piece of plastic wrap on the counter and scrape the mixture onto it. Wrap it up tightly and shape it into a ball through the plastic. Working through the wrap keeps your hands clean and helps you press it into a tight round without it sticking everywhere.

Chill in the refrigerator for 30 minutes to firm up. Don’t skip the chill, the cheeseball needs to set before it’ll hold a shape and take the coating cleanly.

Combine the remaining bacon bits, pecans, and green onions in a shallow bowl for the coating. Unwrap the chilled cheeseball and roll it through the mixture, pressing gently so the whole surface is evenly covered.
