Weekly Meal Plan #64

When the days get shorter and the evenings fill up, easy entrees are what keep my kitchen running. I want dinner to feel like a win without a long list of steps standing in the way. Comfort and simplicity can absolutely go together.

Half your groceries might already be home. Peek in your pantry, then use the list below to finish the job.

Monday — Creamy Green Chili Chicken Enchiladas

A baking dish filled with enchiladas topped with melted cheese and garnished with chopped cilantro.

I keep the heat mild so everyone at the table can enjoy these. They’re easy enough for a weeknight, yet they still feel a little special when friends come over.

Tuesday — Dublin Coddle

A black bowl containing sausage, potatoes, carrots, and cabbage in broth, garnished with parsley, with a fork on the side.

If you’ve spent time around Dublin, you know this dish even if you’ve never cooked it. You almost never see it outside Ireland, and even less often is it made properly.

Wednesday — Panko Crusted Salmon

Three baked salmon fillets topped with a breadcrumb herb mixture and diced onions, served on a white plate with sliced tomatoes in the background.

Baked salmon too often ends up bare and boring. Mine gets a crisp buttery top and a bright, lemony spoonful of herbs the second it comes out of the oven.

Thursday — Cabbage, Potato and Kielbasa Skillet

A spoonful of cooked potatoes, sausage, and cabbage held above a bowl filled with the same mixture, garnished with parsley.

A full dinner out of one pan is what I want when I have zero interest in scrubbing a stack of dishes afterward. This skillet is my answer to that.

Friday — Chicken and Rice Casserole

A fork holds a bite of creamy chicken and rice casserole above a baking dish filled with the same casserole.

Dinner that practically cooks itself is what Friday deserves. Ten minutes of prep gets creamy chicken and rice into the oven, and then I’m free to go do anything else.

Saturday — Fried Rice

A close-up of cooked fried rice with mixed vegetables and small pieces of meat in a white bowl.

Next to almost anything that needs a side, fried rice has a spot on my table. It’s just as good as a meal on its own with whatever protein is left in the fridge.

Sunday — Ground Pork and Potato Casserole

A hand lifts a serving of French Country Ground Pork and Potato Casserole from a rectangular metal pan on a patterned surface.

Sunday dinner shouldn’t swallow three hours of prepping and cooking, and this casserole doesn’t ask for that. Ground pork keeps it easy on the budget, yet it tastes like something you’d order in a bistro.

Dinner doesn’t have to be a big event to feel like one. Take it at your own pace, and the recipes will be right above when you need them.
