Monday — Steak Fried Rice

Tuesday — Garlic Shrimp Scampi

Wednesday — Greek Spaghetti

Thursday — Taco Stuffed Tomatoes

Swapping the tortilla for a tomato turns this into something lighter without losing any of the flavor. A fast dinner that still feels a little different.

Friday — Frito Pie

This is the dinner I make when I want something that feels like a whole spread with minimal actual effort. Rice bowls have never looked this colorful.

Sunday — Chicken Piccata
