Ingredients

  • 1.5 pounds green beans
  • 2 teaspoons olive oil
  • 1/4 cup sliced almonds
  • 1 teaspoon lemon juice
  • 1 teaspoon lemon zest
  • salt and pepper to taste

Instructions

  • Set your oven to 425°F (220°C).
  • Toss the green beans with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer to ensure they roast evenly.
  • Roast for 12 to 15 minutes, stirring halfway through. They should be tender with slightly blistered edges.
  • Heat a dry skillet over medium heat. Add the sliced almonds and stir frequently until they’re golden brown. Remove them from the heat immediately to prevent burning.
  • Remove them from the oven. Toss them with the lemon juice and zest for a burst of brightness.
  • Top with the toasted almonds and serve immediately while everything is warm and crisp.

Notes

  • Ensure your green beans are completely dry before roasting. Moisture can cause them to steam instead of roast.
