- 4 cups seedless watermelon think 1-bite cubes
- 4 cups mixed baby salad greens
- ¼ cup fresh basil
- ½ cup crumbled feta cheese I have also tested this recipe with queso fresca
- ½ teaspoon salt
- ¼ teaspoon black pepper
In a small saucepan, combine balsamic vinegar and honey. Heat over medium, stirring occasionally, until the mixture reduces by half and becomes syrupy (about 8-10 minutes). Remove from heat and let cool.
Layer the mixed greens and cubed watermelon in a large bowl.
Sprinkle with salt and black pepper, then gently toss to combine.
Top with crumbled feta cheese and drizzle the cooled balsamic glaze over the salad just before serving.
