Ingredients

  • 4 cups seedless watermelon think 1-bite cubes
  • 4 cups mixed baby salad greens
  • ¼ cup fresh basil
  • ½ cup crumbled feta cheese I have also tested this recipe with queso fresca
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  • In a small saucepan, combine balsamic vinegar and honey. Heat over medium, stirring occasionally, until the mixture reduces by half and becomes syrupy (about 8-10 minutes). Remove from heat and let cool.
  • Layer the mixed greens and cubed watermelon in a large bowl.
  • Sprinkle with salt and black pepper, then gently toss to combine.
  • Top with crumbled feta cheese and drizzle the cooled balsamic glaze over the salad just before serving.
  • Enjoy Immediately! Serve fresh and savor the delicious flavors.

Notes
