- 1 ½ pound boneless skinless chicken breasts or thighs
- 15 ounce white beans or 1 (15-ounce) can white beans, drained and rinsed
- 15 ounce sweet corn or 1 (15-ounce) sweet corn, drained
- 4 ounce mild diced green chilies or 1 (4-ounce) can
- 1 small onion diced
- 3 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- ½ teaspoon dried oregano
- salt and pepper to taste
- 4 ounce cream cheese cubed
- ½ cup heavy cream or milk
Add the chicken, white beans, corn, green chilies, onion, chicken broth, garlic powder, cumin, oregano, salt, and pepper to the insert of slow cooker.
Cover and cook on Low for 6–7 hours or High for 3–4 hours, until the chicken is tender.
Remove the chicken, shred it with two forks, and return it to the slow cooker.
Add cubed cream cheese and heavy cream or milk. Cover for 10–15 minutes, then stir until smooth and creamy.
Adjust seasoning and serve warm.
