Sheet Pan Pancakes Recipe
One sheet pan of buttermilk batter turns into a full tray of pancake squares, no flipping and no griddle required. It's the version I make when I'm feeding more people than a stovetop can handle at once.

Optional
- ¾ cup mini chocolate chips, blueberries, or diced strawberries
Preheat oven to 400°F. Line a half-sheet pan with parchment paper and lightly grease.
In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
In a separate bowl, whisk buttermilk, eggs, melted butter, and vanilla until combined.
Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
Pour batter into prepared pan and spread evenly. Add toppings if using. Bake 15 to 18 minutes, until golden and set in the center.
Let cool slightly before slicing into 12 squares and serving.
Recipe Card Tips
- Don't overmix once the wet and dry ingredients meet. A few lumps in the batter bake out fine, but overmixing is what makes these dense instead of tender.
- Let the pan cool for a few minutes before cutting. Slicing it hot tears the squares instead of giving you clean edges.
- If you're adding chocolate chips, blueberries, or strawberries, scatter them over the top of the batter rather than stirring them in, so they don't all sink to the bottom during baking.
