Sheet Pan Brownies
One half sheet pan turns out two dozen cakey brownies with a shiny, crackled top, no multiple batches required. It's the version I make anytime dessert needs to feed a crowd.

Preheat the oven to 350°F. Grease and line a half sheet pan (16 x 11.3 inches) with parchment paper, leaving overhang on two sides for lifting.
Melt the butter in a large saucepan. Remove from heat and stir in the granulated sugar and brown sugar until mostly dissolved. Let cool until warm, not hot.
Stir in the cocoa powder until the mixture is glossy and smooth.
In a separate bowl, beat the eggs and vanilla extract for 1 to 2 minutes, until foamy.
Slowly whisk the warm chocolate mixture into the eggs, stirring constantly so the eggs don't scramble.
Sift in the flour and salt. Fold gently until just combined. Don't overmix.
Pour the batter into the prepared pan and smooth the top. Bake for 25 to 28 minutes, until the top is shiny and a toothpick inserted in the center comes out with moist crumbs.
Cool in the pan for 15 minutes, then lift out using the parchment overhang and slice.
Recipe Card Tips
- Whip the eggs and vanilla until they're pale and foamy, not just mixed. That's what gives you the shiny, crackled top.
- Sift the cocoa powder in rather than dumping it. In a batch this size, unsifted cocoa clumps in the corners of the pan.
- Let the pan cool the full 15 minutes before lifting the parchment. Warm brownies tear.
