Pomegranate Mojito Mocktail

Refreshing, tangy, and not too sweet, the Pomegranate Mojito is a tasty and festive twist on a classic mojito. Mocktail style, this is a craft mocktail everyone can enjoy during the holidays or any time!

Equipment

  • 1 cocktail muddler

Ingredients

  • 2 teaspoon white sugar
  • 6 mint leaves torn
  • 2 lime wedges
  • 2 ounces pomegranante juice
  • 4-5 ounces club soda
  • pomegranate arils

Instructions

  • In a glass, muddle the mint leaves with 1-2 teaspoons of sugar to release the mint's aromatic oils.
  • Squeeze in the juice from a couple of lime wedges and add them to the bottom of the glass.
  • Fill the glass with ice cubes that have pomegranate seeds frozen inside.
  • Pour the pomegranate juice over the top, filling the glass about halfway.
  • Top off with club soda for that fizzy lift.
  • Stir gently to combine all the flavors.
  • Garnish with a sprig of mint and a few frozen pomegranate seeds on top.

Notes

Chef Jenn's Tips

  • Adjust the sweetness to your liking by adding more or less sugar.
  • To enhance the mint flavor, clap the mint leaves between your hands before adding them to the glass.
  • If pomegranate seeds are not available, a slice of lime or lemon makes a great alternative garnish.
  • Add 1.5 ounces of rum or vodka to turn this into a holiday cocktail.
