Ingredients

  • 2 tablespoons cooking oil
  • 1 pound cooked potatoes diced
  • ½ cup diced onion
  • 8 ounces cooked cottage roll trimmed of visible fat and cubed
  • ½ cup red bell pepper diced
  • salt and pepper to taste
  • parsley freshly chopped
  • 1 pinch red pepper flakes optional
  • 2 green onions chopped; optional garnish

Instructions

  • Heat the cooking oil in a large skillet over medium-high heat.
  • Add the potatoes and onions and cook in the oil over medium heat for about 5 minutes or until the onion starts to soften.
  • Add the cubed cooked leftover cottage roll and continue cooking until the meat is slightly browned.
  • Add the diced bell pepper and cook for another 1-2 minutes or until just tender-crisp.
  • Season with salt, pepper, and a pinch of red pepper flakes, adjusting to taste. Taste the hash first because cottage roll tends to be salty.
  • Garnish with fresh parsley and a pinch of red pepper flakes before serving to add a pop of color and freshness.
