2 tablespoons cooking oil 1 pound cooked potatoes diced ½ cup diced onion 8 ounces cooked cottage roll trimmed of visible fat and cubed ½ cup red bell pepper diced salt and pepper to taste parsley freshly chopped 1 pinch red pepper flakes optional 2 green onions chopped; optional garnish
