Ingredients

  • 1 pound steak cut into 1-inch cubes
  • ¼ cup salted butter softened
  • 1 teaspoon Worcestershire sauce
  • 2 tablespoons shallots finely chopped
  • 2 cloves garlic finely minced
  • 2 tablespoons parsley finely chopped, plus extra for garnish
  • 1 teaspoon lemon juice
  • ¼ teaspoon ground black pepper

Instructions

  • Preheat the oven. Set your oven to 375°F (190°C).
  • In a small bowl, combine the softened butter, minced garlic, chopped shallots, parsley, lemon juice, Worcestershire sauce, salt, and pepper. Mix well until smooth and evenly incorporated.
  • Heat a skillet over high heat. Add a splash of oil and quickly sear the steak bites on each side for about 1 minute until they are browned but not fully cooked. Remove from heat and set aside.
  • Place one steak bite into each well of the escargot dish. Top each piece with a generous dollop of the garlic butter mixture, ensuring it coats the steak and fills the well.
  • Place the escargot dish in the preheated oven and bake for 5–7 minutes, or until the steak bites are cooked to your desired doneness and the garlic butter is bubbling.
  • Remove the dish from the oven and sprinkle with additional chopped parsley for a fresh pop of flavor. Serve immediately with crusty bread to soak up the flavorful garlic butter.

Notes

Chef Jenn’s Tips

  • Use a tender cut of steak like ribeye or sirloin for the best results.
  • Bake on a cookie sheet with raised sides in case the butter oozes over the top.
  • For a smoky touch, add a pinch of smoked paprika to the garlic butter.
  • Don’t overcook the steak bites—searing and baking briefly ensures they stay juicy.
  • No escargot dish? Use a mini muffin tin as a substitute.
