Ingredients

  • ½ cup plain Greek yogurt
  • 1 teaspoon honey
  • 2 bunches radishes washed and ends trimmed
  • ½ English cucumber
  • 4 green onions sliced on a bias (white and green parts)
  • 1 tablespoon fresh dill chopped
  • salt and freshly cracked black pepper to taste

Instructions

  • In a small bowl, stir Greek yogurt and honey until fully combined; set aside.
  • Wash radishes and cucumber thoroughly and trim off the ends.
  • Slice radishes and cucumber thinly, but not paper-thin, using a mandoline slicer or sharp knife.
  • Combine the sliced radishes, cucumber, green onions, and fresh dill in a large mixing bowl.
  • Add the yogurt-honey dressing to the vegetables, mixing gently until evenly coated.
  • Season with salt and freshly cracked black pepper according to taste.
  • Serve right away or chill for 10–15 minutes to allow flavors to blend. Enjoy!
