Ingredients

  • 2 slices sourdough bread cut thick
  • 1/2 cup cottage cheese
  • 1 mango
  • 1 tablespoon toasted coconut flakes
  • 1 teaspoon black sesame seeds or white sesame seeds

Instructions

  • Toast the sourdough bread. This is best done in a toaster or under the grill until it reaches your preferred level of crispness.
  • Peel and slice the mango while the toast is toasting.
  • Spread 1/4 cup of cottage cheese onto the warm toast, then arrange your mango slices on top.
  • Sprinkle the sesame seeds and toasted coconut on top.
  • Enjoy!

Notes

Chef Jenn's Tips

    • You can toast your coconut flakes in a dry pan over medium heat until they're golden - just watch them closely, they can burn quickly.
    • Don't add the cottage cheese to the bread until you're ready to eat because the bread will get soggy.
    • This recipe is easy to double or triple to feed a crowd.
