- 1 tablespoon unsalted butter divided
- 1 pound bulk garlic sausage or bulk country-style pork sausage
- 1 yellow onion about 1.5 cups, diced
- 1 medium green bell pepper diced, about 1.5 cups diced
- 3 celery ribs diced, about 2 cups celery
- 1 large garlic clove minced
- 2 tablespoons Cajun seasoning
- ½ teaspoon smoked hot paprika
- ¾ teaspoon kosher salt
- ½ teaspoon freshly ground black pepper
- 1 cup uncooked long-grain white rice
- 1¾ cups chicken stock
- 2 tablespoons green onions sliced
- 1 tablespoon fresh parsley chopped
Preheat the oven to 375°F. Grease a 9x9-inch baking dish or 2-quart casserole dish with 1 teaspoon of the butter.
Brown the sausage in a large skillet over medium-high heat for 6 to 7 minutes, breaking it into crumbles as it cooks.
Add the remaining butter, onion, bell pepper, celery, and garlic. Cook for 4 to 5 minutes, stirring occasionally, until the vegetables soften.
Stir in the Cajun seasoning, smoked paprika, kosher salt, and black pepper until the sausage and vegetables are evenly coated.
Transfer the mixture to the prepared baking dish. Stir in the uncooked rice, then pour in the chicken stock and mix well.
Cover the dish tightly with foil and bake for about 30 minutes, or until the rice is tender and the liquid is absorbed.
Rest the casserole for 5 minutes, then top with green onions and parsley before serving.
