Blueberry Boy Bait Recipe

Blueberry boy bait is an old recipe box cake made with fresh or frozen blueberries and topped with a cracked cinnamon-sugar crust instead of frosting. It bakes in one pan in under an hour and travels well for potlucks, brunch, or an afternoon snack.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon table salt omit if using salted butter
  • 1/4 teaspoon baking soda
  • 1/2 cup unsalted butter or 1 stick, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole buttermilk
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar for topping
  • 1 1/2 teaspoons ground cinnamon for topping

Instructions

  • Preheat oven to 350°F. Line an 8-inch square metal pan with parchment paper, leaving overhang on the sides.
  • Whisk together flour, baking powder, salt, and baking soda in a medium bowl.
  • Cream butter and sugar on medium speed for 2 to 3 minutes, until light and fluffy.
  • Beat in eggs one at a time, then mix in vanilla.
  • On low speed, add the dry mixture and buttermilk in alternating additions, beginning and ending with the dry mixture.
  • Toss blueberries with a spoonful of the dry mix, then fold into the batter.
  • Spread batter into the prepared pan and smooth the top.
  • Combine topping sugar and cinnamon, then sprinkle evenly over the batter.
  • Bake for 35 to 40 minutes, until a toothpick inserted in the center comes out clean.
  • Cool in the pan for 10 minutes, then lift out using the parchment and transfer to a wire rack to cool completely.

Recipe Card Tips

  • Toss the blueberries in a spoonful of the dry mix before folding them in. This is what keeps them from sinking to the bottom during baking.
  • Stop mixing as soon as the dry ingredients disappear into the batter. Overmixing here is what turns a tender cake into a dense one.
  • Frozen blueberries go in straight from the freezer, no need to thaw first.
