for the sandwiches:
- 1 pound bacon cooked until crisp
- ½ pound applewood smoked cheddar sliced; or your favorite cheese
- ¼ cup butter softened
- 8 slices bread I use sourdough bread, but any bakery fresh bread will work
- 1 teaspoon fresh thyme
for the hot honey butter:
Cook the bacon until it’s crispy.
Butter one side of each slice of bread and place the buttered side down on a griddle or large skillet.
Top the bread with one slice of cheese, followed by three slices of bacon, and then another slice of cheese.
Spread the hot honey butter on the underside of the second piece of bread, and regular butter on the other side. Place it honey butter side down on top of the cheese.
Griddle until golden brown on the bottom, then flip the sandwich. Continue cooking until the cheese is fully melted and both sides are golden and crisp.
Garnish with a sprinkle of fresh thyme and enjoy!
Chef Jenn's Tips
- To get the cheese perfectly melted without overcooking the bread, you can cover the sandwich with a stainless steel dome or lid while it cooks. I use an upside-down stainless bowl, just watch ‘cause they get hot. This traps the heat and helps the cheese melt evenly.
- If you're making several sandwiches at once, keep the cooked ones warm in the oven at a low temperature until ready to serve.
- Use a good quality sourdough bread for the best flavor and texture. The tangy sourdough pairs beautifully with the smoky bacon and sweet honey butter.
