Pancake Bites with Sausage

Cute pancake bites have a hidden surpise - sausage! These easy bites are easy and fun to make, and they're a great on-the-go breakfast!

Ingredients

  • nonstick cooking spray
  • 1 pound breakfast sausage links
  • 2 cups all-purpose flour
  • 2 tablespoons white granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 2 cups buttermilk
  • 2 eggs
  • 2 tablespoons butter melted
  • 1 teaspoon vanilla

Instructions

  • Preheat your oven to 400-F
  • Cook the sausage according to the package directions. Set it aside to cool.
  • Combine the flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Mix the buttermilk, eggs, melted butter, and vanilla extract in a smaller bowl
  • Add the wet ingredients to the flour mixture, and mix well. Scrape down the sides of the bowl; some small lumps are OK.
  • Spray a mini muffin tin with nonstick cooking spray.
  • Cut each sausage link into thirds. Put one piece of sausage in the bottom of each cup of the mini muffin pan.
  • Top up the muffin cup with pancake batter. Repeat until they're all full.
  • Bake the pancaked bites with sausage at 400-F for about 8-10 minutes or until they're puffed up and cooked through. Use a toothpick to test for raw batter.
  • Remove them from the muffin tin and enjoy with syrup!

Notes

Chef Jenn's Tips

  • You can cook and cut the sausage ahead of time and just keep it in the fridge until you're ready to assemble and bake the pancake bites.
  • You can make the pancake batter ahead of time, too. Keep it in the fridge until you're ready to assemble and bake. You may need to add an extra minute of cooking time if the batter is very cold.
  • Switch things up! Try these bites with ham or bacon in the bottom instead of sausage.
