Creamy Instant Pot Tortellini Soup with Sausage

Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound Italian sausage casing removed
  • 1 1/2 cups diced onions
  • 4 cloves garlic minced
  • 4 cups low sodium beef broth
  • 28 ounce canned diced tomatoes
  • 1 tablepsoon Italian seasoning
  • 1 pound cheese tortellini
  • 2 cups diced zucchini
  • 1 cup heavy whipping cream

Instructions

  • Set your Instant Pot to saute and when it is hot add the oil, sausage links (minus the sausage skin), onion, and garlic.
  • Break up the sausage with a spatula as it browns, chopping it into small pieces. Brown the sausage and cook the onions until they're translucent - about 8 minutes.
  • Deglaze the Instant Pot insert with 1/2 cup of the beef broth and scrape up all the tasty bits stuck to the bottom.
  • Add the rest of the broth, canned tomatoes, and Italian seasoning. Lock the lid into place and set the Instant Pot to high pressure for 15 minutes.
  • Quick release when the time is up then add the zucchini and tortellini. Set the Instant Pot to high pressure for another 2 minutes, then quick release.
  • Open the lid away from you and stir in the cream. Adjust the seasoning, adding salt and pepper if needed, then serve!

Notes

Chef Jenn's Tips

  • A sprinkle of Parmesan cheese and a pinch of red pepper flakes (if you used sweet Italian sausage) is a great garnish for this soup.
  • Use chicken broth instead of beef broth for a lighter flavor.
  • Meat tortellini can be used instead of cheese tortellini.
  • Look for small tortellini - the big ones will be too big to spoon up easily.
