Sloppy Joe Casserole

Preheat your oven to 375°F and spray a 2-3 quart casserole dish with nonstick cooking spray.
Cook the penne pasta as per directions on the package to 1 minute less than al dente. Drain well and cool under cold running water.
Heat olive oil in a large skillet over medium heat and cook the onions until translucent.
Add the ground beef to the skillet and cook, breaking it up as you go, until no longer pink.
Stir in garlic and cook for an additional minute.
Add the tomato sauce, ketchup, brown sugar, ground mustard, chili powder, oregano, paprika, and Worcestershire sauce to the skillet. Season with salt, and pepper, then simmer for 5 minutes. Add the diced bell pepper and mix to combine.
Toss the sauce with the cooked pasta and transfer to the prepared casserole dish and top with cheese.
Crumble hamburger buns over the top of the casserole, then drizzle with melted butter.
Bake covered for 20 minutes. Uncover and bake for an additional 5-10 minutes or until browned and bubbly.

Chef Jenn's Tips
- Undercook the noodles for a minute so they’re very al dente, this way they’ll be perfectly cooked when your casserole is done.
- You can make this dish ahead of time and store it in the fridge until it's ready to bake. Just add a few extra minutes of baking time if the dish is fridge cold.
- Swap out the ground beef for ground pork, chicken or turkey, or even bulk sausage for a different flavor.
