Sloppy Joe Casserole

  • Preheat your oven to 375°F and spray a 2-3 quart casserole dish with nonstick cooking spray.
  • Cook the penne pasta as per directions on the package to 1 minute less than al dente. Drain well and cool under cold running water.
  • Heat olive oil in a large skillet over medium heat and cook the onions until translucent.
  • Add the ground beef to the skillet and cook, breaking it up as you go, until no longer pink.
  • Stir in garlic and cook for an additional minute.
  • Add the tomato sauce, ketchup, brown sugar, ground mustard, chili powder, oregano, paprika, and Worcestershire sauce to the skillet. Season with salt, and pepper, then simmer for 5 minutes. Add the diced bell pepper and mix to combine.
  • Toss the sauce with the cooked pasta and transfer to the prepared casserole dish and top with cheese.
  • Crumble hamburger buns over the top of the casserole, then drizzle with melted butter.
  • Bake covered for 20 minutes. Uncover and bake for an additional 5-10 minutes or until browned and bubbly.
  • Serve and enjoy!

Chef Jenn's Tips

  • Undercook the noodles for a minute so they’re very al dente, this way they’ll be perfectly cooked when your casserole is done.
  • You can make this dish ahead of time and store it in the fridge until it's ready to bake. Just add a few extra minutes of baking time if the dish is fridge cold.
  • Swap out the ground beef for ground pork, chicken or turkey, or even bulk sausage for a different flavor.
