Sweet and Spicy Smoked Pineapple

Ingredients

  • 2 pineapples trimmed, cored and cut into spears
  • 1/2 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 teaspoon chipotle powder

Instructions

  • Preheat the smoker to 250-F as per the manufacturer's instructions.
  • Combine the brown sugar, cinnamon, and chipotle powder in a large bowl.
  • Toss the pineapple spears with the spice mixture to coat.
  • Add the pineapple to the smoker rack and smoke at 250-F for about 40 mintues or until glossy and heated through.
  • Serve hot, warm, or cold, and enjoy!

Notes

Chef Jenn's Tips

  • Smoke the pineapple at 350-F for about 15 minutes or 225-F for about 50-60 minutes. You just want to the glaze to be glossy and the pineapple to be heated through.
  • This Sweet and Spicy Smoked Pineapple recipe calls for 1 teaspoon of chipotle powder, which gives the pineapple a bit of a kick. Chipotle powder can be spicy! Go easy with it until you know how spicy you like it.
