Ingredients

  • 4 tablespoons avocado oil
  • 1 pound shaved ribeye
  • 1 onion sliced thinly
  • 8 ounces mushrooms sliced thinly
  • 2 bell peppers sliced
  • 1/2 teaspoon salt divided
  • 1/4 teaspoon pepper
  • 8 ounces provolone cheese sliced or shredded
  • 2 tablespoons butter
  • 4 rolls

Instructions

  • Preheat your griddle to medium-high.
  • Add a squirt of oil (about a tablespoon) to one area and start the onions. You want them cooked through but not caramelized.
  • Add another squirt of oil to another spot and start the mushrooms.
  • Add oil to a third spot and start the beef cooking. Season the beef with salt and pepper.
  • When the onions and mushrooms are nearly cooked, combine them and add the sliced bell peppers.
  • Butter the buns and put them cut-side down on the flat top to toast.
  • Divide the meat and veggies into 4 portions. Scoop the veggies on top of the meat, and add the cheese to the top of the veggies.
  • Cover the portion with a cooking dome and let it heat through for a minute or two until the cheese melts.
  • Transfer the cheese-topped meat and veggies to the buns and dig in!

Notes

  • Cooking a meal on the Blackstone is all about multitasking. But if you're not up to cooking 4 things at once, do the meat, and veggies one at a time, then move them off the heat. The transferred heat from the cooking area will keep everything warm.
  • Don't like some of the veggies? Skip them! There are no rules when it comes to Philly cheesesteaks on the flat top!
  • Sliced or shredded Provolone cheese works, but you can also use Monterey jack, colby, gouda, or your favorite easy-melting cheese.
  • Prep all the veggies ahead of time so that cooking is a breeze!
