Waldorf Salad

- 8 cups mixed greens
- 1 apple
- 1 pear
- 2 cups grapes
- 1 cup celery
- 1/2 cup craisins
- 1 cup pecans
- 1/2 cup fried shallots
- 1/2 cup blue cheese or your favorite cheese crumbles or shreds
- 1/2 cup salad dressing use your favorite
Prepare the greens. Wash and spin them dry if necessary. Keep them chilled until ready to serve.
Cut the fruit. Core the apple and pear and slice them thinly. Sprinkle the apples with lemon juice if you're cutting them ahead of time.
Slice the celery and green or red grapes.
Toast the pecans or walnuts. You can toast the nuts on a baking sheet in a low (325-F) oven or in a dry skillet.
Assemble the salad by topping the greens with the fruit, nuts, crumbled cheese, and fried shallots.
Serve the dressing on the side, and enjoy!
